Saint Patrick's Day is creeping up on us and I have the perfect Saint
Patrick's Day Guacamole recipe to share with you all! We all know that chips and guacamole are a staple appetizer on any holiday, especially for Mexicans. <3 We cannot live without chips and guac as well as chips and queso. <3 Do you have any holiday plans this year? Do you have your perfect green outfit picked out yet? :P I'm still working on getting my outfit together. <3 I'll have to see what I come up with, but I have a fab lil green headband just for the occasion. <3 Now onto the goodness... here's the delicious Saint Patrick's Day Guacamole recipe that I promised you. <3
SERVES: 4
CALORIES: 170
INGREDIENTS:
2 ea. Avocados From Mexico, mashed
1/4 c. Cilantro, roughly chopped
1/4 c. Salsa verde, premade
2 T. Jalapeño, diced
1 t. Lemon juice
1/2 t. Cotija cheese
1/4 t. Avocado oil
Salt, to taste
INSTRUCTIONS:
In a small sauté pan, heat oil on medium to high heat. Add jalapeño, and cook until tender, approximately 8 minutes
In a small bowl, mash avocados and stir in lemon juice. Salt to taste.
Add cilantro, salsa verde and cooked jalapeño to guacamole mixture and stir until well combined.
Sprinkle cheese on top.
